About the Role
A prestigious luxury resort in the UAE is seeking a talented and experienced Senior Chef de Partie – Pizza Chef to lead its pizza kitchen operations. This position is ideal for culinary professionals who are passionate about authentic pizza preparation, food quality, and kitchen leadership.
The successful candidate will oversee pizza production, maintain exceptional culinary standards, supervise junior kitchen staff, and contribute to menu innovation while ensuring compliance with food safety regulations.
Key Responsibilities
Pizza Preparation & Culinary Excellence
- Prepare and present a variety of pizzas according to established recipes and quality standards.
- Manage all aspects of pizza dough production, including mixing, fermentation, proofing, and storage.
- Ensure consistency in flavor, texture, portion sizes, and presentation across all menu offerings.
- Monitor ingredient quality and verify freshness before use in food preparation.
- Maintain high standards of food preparation during busy service periods.
Kitchen Operations Management
- Oversee the day-to-day activities of the pizza section and ensure efficient workflow.
- Coordinate with other kitchen departments to support smooth restaurant operations.
- Monitor food production processes and ensure timely delivery of orders.
- Report equipment issues and coordinate maintenance requirements when necessary.
- Support senior culinary management in achieving operational and service objectives.
Team Leadership & Training
- Supervise, coach, and mentor Commis Chefs and junior kitchen team members.
- Provide on-the-job training to enhance culinary skills and operational efficiency.
- Foster a collaborative and positive working environment within the kitchen team.
- Ensure all team members follow established kitchen procedures and safety standards.
Food Safety & Quality Control
- Maintain strict compliance with HACCP guidelines, food safety regulations, and sanitation standards.
- Conduct regular inspections of food preparation areas and storage facilities.
- Ensure proper handling, storage, and labeling of ingredients and prepared food items.
- Implement best practices to minimize food waste and maintain cost control.
Menu Development & Cost Management
- Assist with menu planning, seasonal menu updates, and recipe development.
- Contribute innovative pizza concepts and specialty menu items.
- Support recipe costing and profitability analysis.
- Monitor inventory levels and assist in stock control activities.
- Manage food costs while maintaining product quality and guest satisfaction.
Essential Requirements
- Diploma or certification in Culinary Arts, Hospitality Management, or a related discipline preferred.
- Minimum 3 to 5 years of professional experience as a Pizza Chef in hotels, resorts, restaurants, or hospitality establishments.
- At least 1 to 2 years of experience in a supervisory role such as Chef de Partie or Senior Pizza Chef.
- Strong expertise in pizza-making techniques, including dough preparation, fermentation, baking, and oven operations.
- Comprehensive understanding of food safety, hygiene standards, and HACCP principles.
- Ability to work efficiently in a high-volume and fast-paced kitchen environment.
Preferred Qualifications
- Experience preparing artisan, Neapolitan, Roman, wood-fired, or specialty pizzas.
- Knowledge of menu engineering, recipe costing, and food cost control.
- Experience managing inventory and kitchen supplies.
- Previous experience in luxury hotels, resorts, or international hospitality brands.
