Chef de Partie
Job Summary
We are seeking an experienced Chef de Partie (CDP) to manage and oversee an assigned kitchen section or station, ensuring the consistent preparation and delivery of high-quality food in accordance with approved recipes, menus, presentation standards, and food safety requirements.
The Chef de Partie will be responsible for daily station operations, ingredient preparation, cooking, plating, inventory control, kitchen coordination, and supervision of junior kitchen staff. The role requires strong culinary skills, attention to detail, teamwork, and the ability to maintain high standards in a fast-paced professional kitchen.
Key Responsibilities
- Manage and oversee an assigned kitchen section or station, such as hot kitchen, grill, sauces, garde manger, pastry, or other designated areas.
- Prepare, cook, and present dishes according to approved recipes, menu specifications, portion standards, and quality requirements.
- Ensure food is prepared and served on time while maintaining consistent taste, texture, temperature, portion size, and presentation.
- Complete all required mise en place and ensure ingredients are prepared and available before service.
- Monitor the quality, freshness, and condition of ingredients used within the assigned station.
- Supervise and guide Commis Chefs, Demi Chefs, kitchen assistants, and other junior staff assigned to the section.
- Delegate daily preparation and cooking tasks and ensure responsibilities are completed efficiently.
- Train junior kitchen staff in cooking techniques, food preparation, recipes, equipment operation, hygiene, and station procedures.
- Maintain cleanliness, organization, and efficiency within the assigned kitchen station throughout preparation and service.
- Work closely with the Head Chef, Sous Chef, Junior Sous Chef, and other Chef de Parties to coordinate kitchen operations and maintain smooth service.
- Coordinate cooking and plating times with other kitchen sections to ensure dishes for each order are completed and served simultaneously.
- Contribute ideas for menu development, recipe improvement, seasonal dishes, and culinary innovation within the assigned section.
- Follow standardized recipes and contribute to recipe development while maintaining consistency and controlling portion sizes.
- Monitor inventory levels for the assigned station and communicate purchasing and replenishment requirements to the relevant supervisor.
- Assist with receiving, checking, storing, labeling, and rotating food products according to established procedures.
- Maintain proper stock rotation and FIFO (First In, First Out) practices to minimize food waste and maintain product quality.
- Monitor food usage, wastage, and portion control to support effective food cost management.
- Inspect and maintain kitchen equipment, utensils, workstations, and storage areas and report defects or maintenance requirements.
- Conduct quality checks throughout food preparation and service to ensure dishes meet established culinary standards.
- Ensure compliance with food safety, hygiene, sanitation, HACCP, and health and safety requirements.
- Maintain proper food storage, temperature control, labeling, allergen awareness, and safe food-handling practices.
- Support kitchen opening, closing, cleaning, and end-of-service procedures.
- Stay informed about current culinary trends, cooking techniques, ingredients, and food presentation practices and introduce appropriate improvements where applicable.
- Support the implementation of HSE initiatives, participate in safety awareness activities, and contribute to incident reporting and resolution in accordance with company and IMS policies.
Additional Responsibilities
- Assist the Sous Chef and Executive Chef with special events, banquets, functions, and high-volume food production.
- Support menu trials, food tastings, recipe standardization, and new dish development.
- Assist with daily and periodic kitchen inventory counts.
- Report shortages, quality issues, equipment problems, and operational concerns to the relevant supervisor.
- Assist in maintaining kitchen checklists, temperature logs, cleaning schedules, and other required food safety documentation.
- Support the training and development of junior kitchen employees.
- Maintain professional standards of personal hygiene, grooming, uniform, and workplace conduct.
- Assist other kitchen sections when operational requirements demand additional support.
- Perform other culinary and kitchen-related duties assigned by the Chef or management.
Job Knowledge & Skills
- Comprehensive knowledge of culinary techniques, food preparation methods, cooking principles, and professional kitchen operations.
- Strong knowledge of one or more specialized kitchen stations, such as grill, sauces, hot kitchen, pastry, garde manger, or other culinary sections.
- Ability to prepare and present high-quality dishes consistently according to established recipes and standards.
- Good knowledge of menu planning, recipe development, food presentation, portion control, and dish innovation.
- Understanding of food safety, HACCP principles, hygiene, sanitation, allergen management, and safe food-handling practices.
- Experience with kitchen inventory management, stock control, stock rotation, food storage, and waste reduction.
- Strong organizational skills with the ability to prioritize preparation and service activities effectively.
- Good leadership and team-management skills with the ability to supervise, train, and motivate junior kitchen staff.
- Excellent attention to detail regarding food quality, taste, presentation, consistency, and hygiene.
- Strong communication and teamwork skills for effective coordination with chefs and other kitchen departments.
- Ability to work efficiently under pressure in a fast-paced professional kitchen.
- Good knowledge of commercial kitchen equipment and safe operating procedures.
- Creative approach to culinary development and willingness to adopt new cooking techniques and industry trends.
Job Experience
- Minimum 5 years of professional culinary or kitchen experience.
- Minimum 3 years of relevant experience as a Chef de Partie, Demi Chef de Partie, or similar culinary position.
- GCC experience is an advantage, preferably with 2 years of experience in the GCC hospitality industry.
- Experience in hotels, luxury restaurants, fine-dining establishments, resorts, catering companies, or high-volume professional kitchens is preferred.
- Experience supervising Commis Chefs or junior kitchen staff is highly desirable.
Education & Qualifications
- Diploma or certificate in Culinary Arts, Professional Cookery, Hospitality, or a related field preferred.
- Professional culinary training from a recognized culinary institution is an advantage.
- Food safety, HACCP, or related certification is preferred.
